1 1/2 tablespoons fresh rosemary (I've used dried with good results)
2 teaspoons garlic powder
1/2 teaspoon dried thyme
1/4 teaspoon freshly ground black pepper
1 tsp salt
3 pounds boneless pork loin roast
Olive Oil

Preheat oven to 350 degrees F (175 degrees C).
Rub roast with olive oil. Mix rosemary, garlic powder, salt, thyme, and pepper and rub on roast. Transfer to a medium baking dish.
Cook pork roast 1.5 hours in the preheated oven, or to an internal temperature of 160 degrees F. Use pan juices to make an excellent gravy :D

Kell, have you ever tried this recipe with fresh herbs? If so, was there a different result and if so what did you notice?

No I haven't, but I do plan to at some point. I've only made this recipe twice thus far, but will be utilizing it a lot as we really like it. Please let me know the results if you try it with fresh herbs. The only problem I've ever had with this recipe seems to be a lack of leftovers 8)
