I think we will have walleye tonight. DH has been craving it, and we have quite a bit in the freezer. I really don't like it breaded and fried that much any longer, I like it done in foil in the oven or on the grill (-15 today ... I don't think so!!) with some butter and fresh lemon or lime slices or just their juice squeezed over. Sometimes onion slices also. Not sure what for sides yet.

I really like doing fish in the foil with veges! It's very simple and clean-up just involves figuring out where to dispose of the fishy foil (we don't have garbage service, so have to get rid of stuff like that in a dumpster somewhere)

I went a little different route on the walleye last night. I dried the fillets well, then shook them up in a little flour which had salt and pepper added to it, then pan fried them til golden in a bit of olive oil with a dab of butter added. Super good!! It was like melt in your mouth almost. Involves a little more work and clean up than the foil, but I'm afraid DH has a new favorite way for walleye. :)
