Last night I decided to experiment with the leftover frozen mushroom soup I made last week.
I pounded a couple of breasts thin, sauted some onions, garlic and MORE mushrooms, added some spinach alternative (still don't know what it's called, but it's good!) and a little white wine. Steamed it for a couple of min, drained and put on 1/2 the chicken, then folded over, covered with some of the LO Cr of mush and baked, covered about 25 min. It turned out great (if you like mushrooms) :lol: Oh, added some fetA ON top.
Tonight I'm doing something with red snapper. Not sure what. Risoto and salad. NT |
