4 boneless skinless chicken breasts (about 1 lb.)
1/2 cup mayo (not salad dressing)
1 Tablespoon soy sauce
1/4 tsp. ground ginger
1/8 tsp. cayenne pepper
Flatten chicken to 1/4" thickness. Place on broiler pan and broil for about 3 min. per side. Meanwhile combine the rest of the ingredients, brush over one side of chicken and broil for 2-3 minutes, then repeat on the other side, making sure juices run clear. I haven't had this burn yet, but I do watch it pretty closely after applying the sauce. :shock: |
