GREAT COLE SLAW

1 Medium Cabbage
1 Large Carrot
1/2 Cup Mayonnaise
2 Tablespoons Grated Onion (maybe a little more)
2 Tablespoons White Vinegar
3 Tablespoons Sugar (maybe a little less)
2 1/2 Tablespoons Lemon Juice
1/2 Teaspoon Salt
1 or 2 Teaspoons Celery Seeds
1/4 Teaspoon White Pepper
1 1/2 Tablespoons Dijon Mustard

In a large mixing bowl shred or grate the Cabbage and Carrot. In a smaller mixing bowl, make the dressing by adding all the remaining ingredients. Mix well. Stir the dressing into the vegetables a little at a time, mixing well each time. Always remember that you can always add more dressing, but you can never take any out if you add too much. Place the slaw in a covered dish and refrigerate for 4 to 6 hours. Overnight is better.
