This recipe came to me from a dear friend who enjoyed dining out in New York restaurants with me. When I first met Salima she was not that interested in cooking, but now tells me it has become a really delight for her. Here is how she describes the dish.
"GARY!!! I have a really easy recipe! We make this fish at home all the time and it's the best!"
And guess what, she's right! Don't be scared away by the ingredient list. These are items many home cooks can find in their pantry. It may not be as healthy as using fresh ingredients but hey, it tastes good and is easy to make.
When Salima made this dish for me years ago, I never even heard of Tilapia. Now you can find it in every supermarket. If you are not a fan of Tilapia, you can substitute more expensive sole or flounder but I would suggest sticking with the Tilapia.
Now I have to be honest here. When Salima gave me this recipe, she never gave me how much of each ingredient so I had to wing it. Here' s the amounts I used and the fish came out great. If you have a better combination, please let me know and I will give it a try.
