New Jersey Corn on the Cob
The corn at the New Jersey shore is the best I've ever had; it is sweet, tender, and flavorful. So, I thought it would be nice to give you a few ideas of ways to serve corn that might be slightly out of the box. Before we add all sorts of ingredients, though, I should add that sometimes less is more when your corn is wholesome and fresh.
In that spirit, here are a couple of ways to enjoy your sweet corn, such as the way it comes off the stalks on the cob.
Boiled Corn on the Cob
Boiling is one of the simplest and quickest methods to prepare this delicious summer treat. Here’s how to do it:
Ingredients:
- Fresh corn on the cob (as many as you need)
- Water
- Salt (optional)
- Butter (optional, for serving)
Instructions:
- Prepare the Corn: Start by husking the corn. Remove the outer green husks and the silky threads underneath. Break off any excess stem to make handling easier.
- Boil Water: Fill a large pot with enough water to submerge the corn fully. If desired, add a pinch of salt to enhance the flavor. Bring the water to a rolling boil over high heat.
- Add Corn: After boiling the water, carefully add the corn cobs to the pot. Make sure they are submerged completely. You can add as many cobs as will fit, but avoid overcrowding the pot to ensure even cooking.
- Cook the Corn: Boil it for about 4 to 7 minutes, depending on its size and freshness. Fresh corn generally cooks faster. The kernels should be tender but still have a slight crunch.
- Remove and Serve: Using tongs, carefully remove the corn from the pot and place it on a plate or cutting board. Let it cool slightly before serving.
- Add Butter and Seasoning: Serve the corn warm, slathered with butter, and sprinkled with salt, or get creative with toppings like herbs, spices, or cheese.
Boiling corn on the cob is quick and preserves its natural sweetness and bright flavor, making it a perfect side dish for any meal!
Steamed
Steaming corn on the cob is a fantastic way to retain its natural sweetness and vibrant color while ensuring a tender, juicy texture. This method is simple and enhances the flavor without the need for a lot of added ingredients. Here’s how to do it:
Ingredients:
- Fresh corn on the cob (as many as you need)
- Water
- Optional: salt or butter for serving
Instructions:
- Prepare the Corn: Start by husking the corn. Remove the outer green husks and the silky threads underneath. Trim the ends if necessary.
- Set Up the Steamer: Fill a large pot with about 1-2 inches of water. Place a steamer basket or a colander in the pot, ensuring that the bottom of the basket is above the water level. You can use a heatproof plate or an inverted bowl if you don’t have a steamer basket.
- Bring Water to a Boil: Cover the pot and bring the water to a rolling boil over high heat.
- Add Corn: After boiling the water, carefully place the corn cobs in the steamer basket. You can stack them if necessary, but avoid overcrowding to ensure even cooking.
- Cover and Steam: Cover the pot with a lid and steam the corn for 5 to 7 minutes. The corn is done when the kernels are bright yellow and tender but still crisp.
- Remove and Serve: Carefully remove the corn from the steamer using tongs, as it will be hot. Let it cool slightly before serving.
- Add Flavor: Serve the steamed corn warm, topped with butter, salt, or your favorite seasonings. You can also get creative with toppings like chili powder, lime juice, or grated cheese.

Ingredients:
- Fresh corn on the cob (as many as you need)
- Olive oil or melted butter (optional)
- Salt and pepper (optional)

- Prepare the Corn: Start by husking the corn. Remove the green husks and silky threads. Leave the husks on for a more rustic flavor and to help steam the corn while it grills.
- Soak (Optional): If leaving the husks on, consider soaking the corn in water for 15-30 minutes before grilling. This helps prevent the husks from burning and adds moisture.
- Preheat the Grill: Preheat your grill to medium-high heat (about 350°F to 400°F or 175°C to 200°C).
- Oil and Season (Optional): If desired, brush the corn with olive oil or melted butter and sprinkle with salt and pepper. This adds flavor and helps with caramelization.
- Grill the Corn:
- With Husks: Place the soaked corn directly on the grill grates. Grill for about 15-20 minutes, turning occasionally, until the corn is tender and the husks are charred.
- Without Husks: Place the corn directly on the grill if you’ve removed the husks. Grill for about 10-12 minutes, turning every few minutes until all sides are evenly charred.
- Remove and Serve: Once the corn is cooked and has a nice char, remove it from the grill using tongs. Let it cool for a few minutes before serving.
- Add Toppings: Serve the grilled corn warm, topped with butter, salt, or your favorite seasonings. For added flavor, you can also try creative toppings like lime juice, chili powder, cheese, or fresh herbs.

- Place on a Baking Sheet: Arrange the corn cobs (either wrapped in foil or unwrapped) on a baking sheet for easy handling.
- Roast the Corn: Place the baking sheet in the preheated oven. Roast for about 25-30 minutes, turning the cobs halfway through for even cooking. If the corn is wrapped in foil, it may take a few extra minutes.
- Check for Doneness: The corn is done when tender and the kernels are plump and slightly golden. If you prefer a little more char, you can broil the corn for an additional 2-3 minutes at the end of the roasting time.
- Remove and Serve: Carefully remove the corn from the oven (it will be hot!). If wrapped in foil, let it cool for a minute before unwrapping.
- Add Toppings: Serve the roasted corn warm, slathered with butter, and sprinkled with salt, or try topping it with your favorite seasonings like chili powder, cheese, or fresh herbs for an extra flavor boost.

Ingredients:
- Fresh corn on the cob (as many as you need)
- Butter (optional)
- Salt and pepper (optional)
Instructions:
- Prepare the Corn: Start by husking the corn. Remove the outer green husks and silky threads. If the cobs don’t fit into your sous vide bags, you can break them in half.
- Season the Corn (Optional): If desired, brush the corn with melted butter and sprinkle with salt and pepper for added flavor.
- Vacuum Seal: Place the corn in a vacuum-sealable bag in a single layer. If you’re using butter, pat each cob before sealing. Vacuum seal the bag, removing as much air as possible.

- Remove and Serve: After cooking, carefully remove the bag from the water bath. Take the corn out of the bag and let it cool for a minute before handling.
- Optional Finishing Touch: You can finish the corn on the grill or under the broiler for a few minutes to add char and enhance the flavor. Brush with more butter and grill for 2-3 minutes until you see grill marks.
- Enjoy: Serve the sous vide corn warm, either plain or with your favorite toppings, such as butter, cheese, or herbs.

Wendy
It might be sacrilege, but we put ours (post-shucking) in the microwave for about 2 minutes. If it's a little less fresh, it gets maybe a minute longer. I find it delicious, and you get one less dirty dish! 🙂

Not at all Wendy. The microwave is an excellent way to cook corn as well as other vegetables. I read a great article in the New York Times that talked about the advantages of cooking vegetables with a microwave. I'll have to work on my own post about this subject.
By the way, I once cooked a whole bunch of corn on the cob in a dishwasher for a party.

JERSEY CORN BEST? YOU CAN'T BE SERIOUS. THE BEST SWEET CORN IN THE WORLD - NOT MERELY THE U.S. - COMES FROM THE MIDDLE WEST: IOWA, ILLINOIS, NEBRASKA! HAVE YOU EVER BEEN TO THE U.S.?
RG
Hey Henry, no need to shout. I'm from New Jersey so of course I think it is the best but I respect your opinion. I wonder if anyone has ever done a national taste test for sweet corn. If anyone has heard of one, please let me know.
gr8white
Henry, Have you ever tried NJ Corn? If you had, you obvioulsy would not have posted your ridiculous comments.
Jennifer
Instead of the traditional butter/herbs, I like to drizzle olive oil over the cooked corn and sprinkle onto that a little chili pepper, or even a little Old Bay seasoning - great with a clambake!
Sounds delicious Jennifer. - RG
Judie
Please describe the dishwasher method. I've also seen it mentioned on another site, but they didn't elaborate either. Thanks!

I think the best way to cook and eat corn is the natural way, without any additives,it tastes best that way U savor all the good nutrients that corn has to offer ,I like to roast them on an open fire ,or bar-b -q,them with their clothes for at least 7 - 10 min, then peel off, singe over hot coals for about two mi.or until lightly brown, ENJOY A GOOD ROASTED CORN!!! no additives.
G. Stephen Jones
Not much of a method, Judie. This may not be something you really want to do. I read about it somewhere, and we needed to cook a whole bunch, so we tried it. You may want to do a LOT more research or test it out yourself with a few ears of corn. We just shucked the corn, stuck it in the dishwasher, and ran it through a cycle. I suppose you might be concerned with residual dishwashing detergent, but I don't remember it being a problem. Please do some more homework before trying this at home. And let me know what you find out. - RG

Md. Eastern Shore corn is by far the sweetest. The White Silver Queen has the fullest ears and tastest kernels. Just pull back the husk slightly and add your favorite seasoning. Rewrap the ear and grill fer 7 - 10 minutes. Husk and eat away.
