I'm not sure where the idea for this cartoon came from, but the thought of two lobsters sunbathing in a large pot of boiling water and getting sunburned made me laugh.
Why Do Lobsters Get Red When You Cook Them?
When you cook a lobster, the shell turns red due to "denaturation." Denaturation is a chemical process that alters the structure of proteins in the lobster's shell, causing them to unfold and change shape. This change in protein structure reflects light differently, resulting in the red color you see.
Additionally, during cooking, certain pigments in the lobster's shell, such as astaxanthin, become more prominent, contributing to the red coloration. So, the red color of a cooked lobster is a combination of these factors: denaturation of proteins and the presence of pigments.
