Ingredients

shallot
minced

tablespoon
butter
1
cup
Merlot wine
1
teaspoon
dried thyme
1
cup
demi glace
2
ounces
heavy cream
salt and pepper
to taste
Instructions
Heat up a sauce pan and when hot, add the butter.
Sauté the shallot in the butter on medium high heat for 3 - 4 minutes.
Add the Merlot and thyme, and reduce by three quarters.
Add the demi glace and simmer for a few minutes.
Whisk in the heavy cream.
Taste and season with salt and pepper, to taste.
