- 2 pounds potatoes either starchy - waxy or a mix of both
- 1 teaspoon salt
- 7 tablespoons unsalted butter
- 1 cup half and half
- freshly ground black or white pepper - to taste
Start in Cold Water
Place potatoes in a pot and cover with cold, salted water.
