Ingredients

  • 10 ounces fresh goat cheese softened
  • 4 ounces cream cheese softened
  • 1 tablespoon honey
  • 1 teaspoon orange zest
  • ¼ teaspoon salt
  • ½ cup dried cranberries finely chopped
  • ½ cup shelled pistachios finely chopped
  • 1 tablespoon fresh thyme or rosemary optional

Instructions

Soften the Cheeses

  • Let both cheeses sit at room temperature for 20 to 30 minutes. This makes mixing smooth and effortless.

Mix the Base

  • In a medium bowl, combine goat cheese, cream cheese, honey, orange zest, and salt. Stir until creamy and thoroughly blended.

Prepare the Coating

  • On a sheet of parchment paper, mix the chopped cranberries, pistachios, and herbs if using. Spread into an even layer.

Shape the Log

  • Spoon the cheese mixture onto the center of the parchment. Use the paper to gently roll the cheese into a log, smoothing as you go.

Coat Generously

  • Roll the log over the cranberry-pistachio mixture, pressing lightly so it adheres on all sides.

Chill to Set
