- 8 ounces thin spaghetti or vermicelli noodles
- 2 tablespoons vegetable oil
- 1 pound chicken breast or thigh cut into bite-sixed pieces
- 1 small onion thinly sliced
- 1 medium carrot julienned
- 1 green bell pepper thinly sliced
- 2 cloves garlic minced
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce optional
- 1 cup chicken stock
- salt & pepper to taste
- green onions chopped, for garnish
Cook the vegetables
In the same pan, add onion, carrot, bell pepper, and garlic. Stir-fry for 3–4 minutes until slightly tender.
Combine ingredients
Return chicken to the pan. Add soy sauce, oyster sauce (if using), sesame oil, and chicken broth. Stir to coat evenly.
