Ingredients

  • 1 pound fresh baby spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 2 tablespoons pine nuts
  • ¼ cup feta cheese crumbled
  • salt and pepper to taste

Instructions

Cook the Spinach in the Microwave

  • Wash the spinach under cold water, leaving it slightly damp.
  • Place it in a microwave-safe bowl, cover it with a safe plate, and microwave on high for 3 minutes.
  • Remove, transfer to a colander, and press to release water.
  • Chop roughly on a cutting board and press again in the colander to remove excess moisture.

Toast the Pine Nuts

  • Heat a large skillet over medium heat. Add the pine nuts and toast them for 2-3 minutes, stirring often, until golden and fragrant.
  • Remove them from the skillet and set aside.

Sauté the Garlic

  • In the same skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.

Add the Spinach

  • Stir the prepared spinach into the skillet. Sauté for 2-3 minutes, mixing it with the garlic.

Finish with Pine Nuts and Feta

  • Stir in the toasted pine nuts and season with salt and pepper. Remove from heat and sprinkle with crumbled feta cheese.

Serve Immediately

  • Transfer to a serving dish and enjoy as a side or light meal. This dish is quick, flavorful, and perfect for any occasion!
