Shrimp and Crispy Rice with Citrus

For the Crispy Rice
- 2 cups cooked white rice preferably day-old for best crispness
- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil optional
- salt to taste
For the Citrus Sauce
- zest & juice of 1 orange
- zest & juice of 1 lime
- 1 tablespoon honey
- 1 teaspoon soy sauce
- 1 teaspoon rice wine vinegar
- ½ teaspoon red pepper flakes optional
For the Garnish
- 2 green onions sliced
- fresh cilantro chopped
- extra citrus zest
Prepare the Crispy Rice
Heat 2 tablespoons of vegetable oil in a large nonstick skillet over medium heat.
Add the rice in an even layer. Press gently with a spatula.
Cook without stirring for 6–8 minutes, until the bottom turns golden brown and crisp.
Drizzle with sesame oil and sprinkle with salt. Remove from the pan and set aside.
2. Cook the Shrimp
Toss shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper.
Heat a skillet over medium-high heat.
Add shrimp in a single layer. Cook 2–3 minutes per side, until pink and opaque.
Remove from heat.
3. Make the Citrus Sauce
:In a small bowl, whisk together orange juice and zest, lime juice and zest, honey, soy sauce, rice vinegar, and red pepper flakes.
4. Assemble the Dish
Place crispy rice on a serving platter or individual plates.
Top with cooked shrimp.
Drizzle citrus sauce over the shrimp and rice. Garnish with green onions, cilantro, and extra citrus zest.
