Ingredients

For the Crispy Rice

  • 2 cups cooked white rice preferably day-old for best crispness
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil optional
  • salt to taste

For the Shrimp

For the Citrus Sauce

  • zest & juice of 1 orange
  • zest & juice of 1 lime
  • 1 tablespoon honey
  • 1 teaspoon soy sauce
  • 1 teaspoon rice wine vinegar
  • ½ teaspoon red pepper flakes optional

For the Garnish

  • 2 green onions sliced
  • fresh cilantro chopped
  • extra citrus zest

Instructions

  • Prepare the Crispy Rice
  • Heat 2 tablespoons of vegetable oil in a large nonstick skillet over medium heat.
  • Add the rice in an even layer. Press gently with a spatula.
  • Cook without stirring for 6–8 minutes, until the bottom turns golden brown and crisp.
  • Drizzle with sesame oil and sprinkle with salt. Remove from the pan and set aside.

2. Cook the Shrimp

  • Toss shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper.
  • Heat a skillet over medium-high heat.
  • Add shrimp in a single layer. Cook 2–3 minutes per side, until pink and opaque.
  • Remove from heat.

3. Make the Citrus Sauce

  • :In a small bowl, whisk together orange juice and zest, lime juice and zest, honey, soy sauce, rice vinegar, and red pepper flakes.

4. Assemble the Dish

  • Place crispy rice on a serving platter or individual plates.
  • Top with cooked shrimp.
  • Drizzle citrus sauce over the shrimp and rice. Garnish with green onions, cilantro, and extra citrus zest.

5. Serve Immediately

  • Enjoy while the rice is still crisp and the shrimp warm.
