- 1 cup wild rice rinced
- 2½ cups chicken or vegetble stock
- 1 tablespoon olive oil or butter
- 1 small onion finely chopped
- 2 celery stalks finely chopped
- 1 carrot diced
- 2 cloves garlic minced
- ½ teaspoon dried thyme 1 teaspoon fresh
- ½ teaspoon salt or to taste
- ¼ teaspoon black pepper
- ⅓ cup dried cranberries
- ¼ cup sliced almonds
- 2 tablespoons fresh parley chopped
Sauté the Vegetables
In a large saucepan, heat olive oil or butter over medium heat. Add onion, celery, and carrot. Cook for 5 minutes, stirring often, until softened.
