For the Salad

noodles
soba, rice noodles, or spaghetti

shredded carrots

cup
cucumber
julienned

red pepper
thinly sliced

cup
shredded red cabbage

cup
cilantro or mint
chopped
grilled chicken, tofu, or shrimp
optional
Instructions
Cook the noodles according to package instructions. Drain and rinse under cold water until cool.
In a large bowl, whisk all dressing ingredients together.
Add noodles and veggies to the bowl. Toss until everything is well coated.
Top with your favorite protein and fresh herbs.
Chill for 10 minutes (if you have time) and serve cold!
