Ingredients

For the Salad

  • 8 ounces noodles soba, rice noodles, or spaghetti
  • 1 cup shredded carrots
  • 1 cup cucumber julienned
  • 1 red pepper thinly sliced
  • 1 cup shredded red cabbage
  • ¼ cup cilantro or mint chopped
  • grilled chicken, tofu, or shrimp optional

Instructions

  • Cook the noodles according to package instructions. Drain and rinse under cold water until cool.
  • In a large bowl, whisk all dressing ingredients together.
  • Add noodles and veggies to the bowl. Toss until everything is well coated.
  • Top with your favorite protein and fresh herbs.
  • Chill for 10 minutes (if you have time) and serve cold!
