Ingredients

  • 1 large red bell pepper roughly chopped
  • 1 fresh habanero pepper dried works too
  • 1 large shallot minced
  • 4 cloves garlic minced
  • 1 cup water
  • ⅓ cup red wine vinegar
  • 1 tablespoon paprika
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1½ teaspoon salt

Instructions

Prep the Peppers

  • Put on gloves, then roughly chop the bell pepper and the habanero. If you're using a dried habanero, grind it.
  • For a milder sauce, remove the seeds and white membranes from a fresh habanero.

Prep the Shallot and Garlic

  • Mince the shallot and garlic.

Simmer

  • Turn on the vent fan. Combine all of the ingredients in a saucepan, bring to a boil, then simmer for 8 minutes.
  • Habanero fumes are strong, so ventilate before you start.

Blend

  • Let the mixture cool for a few minutes, then puree it in a blender, venting the lid so the steam can escape.
